Citrus Mint Tropical Fruit Salad

The star of this salad is the simple to make citrus mint dressing. It’s just so delicious and so refreshing you’ll want to eat the entire bowl of fruit.

Every so often a couple women at the barn and I get together, go riding and eat a potluck lunch at the barn. Last week I spent my Labor Day enjoying this fun little tradition and, as always, our potluck lunch was delicious (this photo is proof). We had greek salad, hummus and pita, and this tropical fruit salad. Everyone enjoyed the fruit salad so much I just had to share the recipe.

If you’re not a big fan of tropical fruit you can easily swap any of the ingredients for your favorites. This dressing would be great with anything!

Tropical Fruit Salad with Citrus Mint Dressing
adapted from Cooking Light | Makes 6-8 servings

Ingredients:
4 kiwifruit, peeled and cubed
2 cups honeydew, cubed
2 cups cantaloupe, cubed
1 medium papaya, peeled and cut into 1-inch chunks

For the dressing:
1 tablespoon sugar
1 1/2 tablespoons diced fresh mint
1/2 teaspoon finely grated fresh orange zest
2 tablespoons fresh orange juice
1 teaspoon fresh lime juice

Use a motor and pestle (I have this one) to crush the sugar, mint and orange zest. Then add the orange and lime juice and stir to combine.

Mix the fruit in a large bowl. Pour the mint dressing over the fruit and gently stir to distribute the dressing. Serve immediately or store in an air-tight container for up to 2 days.
